Write an information report to your supervisor who has asked for information about an issue she is facing in her business.  The busines, it can be whatever type of business you decide to make it, has grown rapidly from an entrepreneurial start up, run by family and friends to the stage where it now has 50 employees.  The owner and her friends and family no longer have the expertise to run the business efficiently.  You can pretend that the owner has asked you to help in a certain area, based on what you think your major will be.  For example, you could write about hiring practices if you like HR or setting up an accounting system if you are interested in finance or accounting.
